I always order spicy pork stir-fry when we go to restaurants, and my husband orders squid stir-fry. It’s not easy to stir-fry squid at home to be as perfectly cooked as in a restaurant. I heard that stir-frying with semi-dried squid prevents it from becoming watery, so I decided to give it a try.

Main Ingredients

  • 1 semi-dried squid
  • 1 portion of udon noodles
  • 1/2 zucchini
  • 1/3 carrot
  • 1/2 onion
  • 1/2 green onion
  • 1 red chili pepper
  • 1 green chili pepper

Seasoning

  • 2 Tbsp soy sauce
  • 2 Tbsp gochugaru (Korean chili flakes)
  • 1 Tbsp minced garlic
  • 1 Tbsp gochujang (Korean chili paste)
  • 2 Tbsp oligodang (corn syrup)
  • 1 Tbsp sugar
  • Pinch of black pepper
  • Pinch of sesame seeds

Cooking Instructions

Step 1

First, let’s prepare the vegetables. Slice the zucchini and carrot into thick, long strips about 0.5 cm thick. Slicing them a bit thick will prevent them from falling apart during stir-frying.

Step 2

Slice the onion into strips similar in thickness to the zucchini and carrots. Cut the green onion into large diagonal pieces. Similarly, slice the red and green chili peppers diagonally. Adding green chili peppers will enhance the spicy flavor.

Step 3

Score the semi-dried squid by making cuts across its body. You can make diagonal or crosshatch patterns for better sauce absorption and a more pleasant texture. Cut the squid into bite-sized pieces.

Step 4

Now, let’s make the delicious seasoning. In a bowl, combine 2 Tbsp soy sauce, 2 Tbsp gochugaru, 1 Tbsp minced garlic, 1 Tbsp gochujang, 2 Tbsp oligodang, and 1 Tbsp sugar. Mix them well. Finally, add a pinch of black pepper and sesame seeds. This seasoning is key to the flavor of the squid stir-fry, so mix it thoroughly.

Step 5

Heat a pan over medium heat. Pour in the prepared seasoning and bring it to a boil. Once the sauce is bubbling, add the scored semi-dried squid and stir-fry until the sauce coats the squid evenly. Be careful not to overcook the squid, as it can become tough.

Step 6

When the squid is partially cooked, add the zucchini, carrot, and onion. Stir-fry until the vegetables soften and become translucent. When the vegetables are almost cooked, add the diagonally sliced chili peppers and green onion, and stir-fry for a short while longer. Avoid overcooking, which can make the vegetables lose their crispness.

Step 7

For a heartier meal, you can boil the udon noodles separately in boiling water and then stir-fry them with the squid mixture. This allows the noodles to absorb the flavorful sauce, making it even more delicious. Enjoy your meal!
