Main Ingredients- 1/2 Onion (thinly sliced)
- 1 Green Onion (sliced diagonally)
- 1 handful of Crown Daisy (cut into 2-3 pieces)
- 1 measuring cup of Well-fermented Kimchi (cut into 2cm pieces)
- 1/4 block Firm Tofu (cut into bite-sized pieces)
- 1 measuring cup of Rice Cake Soup Strips (soaked in water)
- 1 Green Chili Pepper (sliced diagonally)
- 1 Red Chili Pepper (sliced diagonally)
- 1 can Canned Saury (drain liquid, use fish)
- 2 Tbsp Baked Beans (can substitute for ham)
- 1 serving Ramen Noodles
- 1 slice Processed Cheese
- 800ml Rice Water (or anchovy-kelp broth)
Seasoning Paste Ingredients- 2 Tbsp Gochujang (Korean chili paste)
- 3 Tbsp Soy Sauce
- 2 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Minced Garlic
- 1 Tbsp Cooking Wine (Mirin)
- 1/2 Tbsp Salt (for adjusting taste)
- 2 Tbsp Gochujang (Korean chili paste)
- 3 Tbsp Soy Sauce
- 2 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Minced Garlic
- 1 Tbsp Cooking Wine (Mirin)
- 1/2 Tbsp Salt (for adjusting taste)
Cooking Instructions
Step 1
First, prepare the vegetables. Thinly slice the onion. Slice the green onion, green chili, and red chili peppers diagonally, about 2-3 cm long. Remove any wilted parts from the crown daisy and cut it into 2-3 pieces. Cut the kimchi into bite-sized pieces, about 2cm wide.
Step 2
Next, prepare the tofu by cutting it into 2-3 cm cubes. Briefly soak the rice cake soup strips in cold water; this will make them chewier. For the canned saury, carefully drain the liquid and gently remove the fish, trying not to break it apart.
Step 3
Now, let’s make the flavorful seasoning paste, the heart of this Budae Jjigae. In a bowl, combine 2 Tbsp Gochujang, 3 Tbsp Soy Sauce, 2 Tbsp Gochugaru, 1 Tbsp Minced Garlic, and 1 Tbsp Mirin. Mix thoroughly until smooth and well combined. You can add or adjust salt to your preference.
Step 4
It’s time to assemble and cook! In a large pot, layer the sliced onion, soaked rice cake strips, green onion, kimchi, cubed tofu, baked beans, the saury fish, and the prepared seasoning paste. Pour in 800ml of rice water (or broth) and bring to a boil over high heat.
Step 5
Once the stew starts boiling vigorously, add the crown daisy and the diagonally sliced green and red chili peppers. Let it simmer for a short while longer until the vegetables are just tender. This will deepen the flavor of the broth.
Step 6
The final step! Add the ramen noodles and cook until done. When the noodles are almost cooked, place a slice of processed cheese on top of the noodles. As the cheese melts, it will enrich the broth, making it creamier and more delicious. Once the cheese is melted, your Canned Saury Budae Jjigae is ready to be enjoyed hot!
