Here’s a recipe for one of our household’s ultimate rice-stealing side dishes: a savory and sweet braised chicken tenderloin and potato dish! Using chicken tenderloin makes it easy to eat and clean up afterward. It’s a fantastic side that’s both flavorful and satisfying!
Main Ingredients- 10 pieces chicken tenderloin
- 2 small potatoes
- 1 stalk green onion (scallion)
- Milk, for soaking
- 1 handful glass noodles (optional, for added texture)
Braising Sauce Ingredients- 1 cup soy sauce (using a soju cup as a measure)
- 1/2 cup sugar (using a soju cup as a measure)
- 1 cup water (using a soju cup as a measure)
- 1/2 cup mirin or cooking wine (using a soju cup as a measure)
- 1 Tbsp minced garlic
- 1/2 Tbsp sesame oil
- Sesame seeds, for garnish
- 1 cup soy sauce (using a soju cup as a measure)
- 1/2 cup sugar (using a soju cup as a measure)
- 1 cup water (using a soju cup as a measure)
- 1/2 cup mirin or cooking wine (using a soju cup as a measure)
- 1 Tbsp minced garlic
- 1/2 Tbsp sesame oil
- Sesame seeds, for garnish
Cooking Instructions
Step 1
If your chicken tenderloin is frozen, thaw it first. To remove any gamey smell and make the chicken extra tender, soak it in milk for about 30 minutes. This step is key to a delicious result.
Step 2
Wash the potatoes thoroughly and cut them into bite-sized cubes, about 2-3 cm. Slice the green onion diagonally or finely chop it to add a fresh aroma.
Step 3
If using glass noodles, soak them in cold water for at least 30 minutes. This will help them absorb the braising sauce evenly and achieve a chewy texture.
Step 4
Rinse the chicken tenderloin that was soaking in milk under cold running water. Then, blanch the chicken in boiling water for about 10 minutes. This will remove any remaining blood or impurities, making it clean and pure. Rinse again with cold water and drain well.
Step 5
Now, let’s make the delicious braising sauce! In a bowl, combine 1 cup soy sauce, 1/2 cup sugar, 1 cup water, and 1/2 cup mirin. Add 1 Tbsp minced garlic for depth of flavor, 1/2 Tbsp sesame oil for nuttiness, and a sprinkle of sesame seeds for garnish. Stir everything together until well combined. Your flavorful braising sauce is ready!
Step 6
In a deep pot or pan, place the blanched chicken tenderloin and the cubed potatoes. Pour all of the prepared braising sauce over them. Bring the mixture to a boil over high heat initially. As it starts to boil, the flavors will begin to meld beautifully.
Step 7
Once the sauce has reduced slightly, lower the heat to medium-low. From this point, it’s important to stir occasionally to prevent sticking and allow the sauce to evenly coat the potatoes and chicken as it simmers gently. Continue to braise for about 15-20 minutes.
Step 8
When the sauce is still slightly thick but not completely dry, add the soaked glass noodles and the sliced green onions. Cook for another minute or two until the noodles are tender and the green onion’s fragrance infuses the dish. Turn off the heat and serve. This is absolutely delicious spooned over a bowl of hot steamed rice!
