This recipe simplifies the process by using ready-made naengmyeon broth, allowing you to enjoy a delicious and cooling meal at home without much hassle. Ingredients- 2 servings of somyeon or jungmyeon noodles (approx. the size of a 500-won coin per serving)
- 2 handfuls of well-fermented kimchi (chopped into bite-sized pieces)
- 1/2 Tbsp sugar (adjust according to the kimchi’s sourness)
- 1 Tbsp sesame oil
- 8 Tbsp kimchi brine
- 2 packs of store-bought naengmyeon broth (adjust to taste)
Cooking Instructions
Step 1
First, bring a generous amount of water to a rolling boil in a pot for cooking the noodles for two servings. You can use either somyeon (thin wheat noodles) or jungmyeon (medium-thick wheat noodles), depending on your preference. (Tip: A good portion for one person is about the size of a 500-won coin.) Once the water is boiling vigorously, add the noodles and stir occasionally to prevent them from sticking. While the noodles are cooking, pour in cold water 2-3 times when the water comes to a boil again; this helps the noodles cook to a perfect al dente texture.
Step 2
While the noodles are cooking, let’s prepare the kimchi and broth. In a bowl, combine 8 tablespoons of kimchi brine with the two packs of store-bought naengmyeon broth. Mix them well. If you place this broth mixture in the freezer for a while, it will become slushy and extra cold, making for a wonderfully refreshing experience. Prepare about two handfuls of kimchi; well-fermented kimchi works best. Chop it into small, bite-sized pieces. Then, add 1/2 tablespoon of sugar and 1 tablespoon of sesame oil, and mix everything together. If your kimchi is particularly sour, feel free to add a little more sugar to balance the flavor.

Once the noodles are perfectly cooked and chewy, drain them using a colander and rinse them thoroughly under cold running water to wash off excess starch. Shake off the water well. Arrange the drained noodles in a serving bowl. Top generously with the seasoned kimchi. For an extra touch, add half of a hard-boiled egg, cut in half, as a garnish.
