Today, we’re making homemade dumplings! My whole family loves dumplings, so we often made them together at home when I was young. After a long time, I decided to revisit those childhood memories and make some dumplings. You might think making dumplings at home is difficult, but it’s actually quite simple once you try it. Dumpling Filling Ingredients

  • 300g ground pork (preferably with some fat)
  • 100g fresh chives
  • 50g green onions (scallions)
  • 2 Tbsp minced garlic
  • 1 Tbsp salted shrimp (saeu-jeot)
  • 1 Tbsp soy sauce
  • 1 Tbsp sesame oil
  • 1 tsp chicken stock
  • 1/8 tsp black pepper

Cooking Instructions

First, let’s prepare the main ingredients for our delicious dumpling filling. You’ll need pork, chives, green onions, and garlic.

Wash the chives and green onions thoroughly and pat them dry. Finely chop them into pieces about 0.5 cm long. Chopping them this way will give the filling a pleasant texture.

Mince the garlic finely. Minced garlic plays a crucial role in enhancing the overall flavor of the dumpling filling.

In a large bowl, combine the ground pork, chopped chives and green onions, minced garlic, 1 Tbsp salted shrimp, 1 Tbsp soy sauce, 1 Tbsp sesame oil, 1 tsp chicken stock, and 1/8 tsp black pepper. Adding chicken stock will boost the umami flavor of the filling.

Gently mix all the ingredients and seasonings together with your hands until well combined. Be careful not to overmix or knead too vigorously, as this can make the meat tough. Just mix until everything is evenly distributed.

Now it’s time to assemble the dumplings! Keep the dumpling wrappers covered with a damp cloth to prevent them from drying out. Lightly dust a tray with flour so the dumplings don’t stick. Also, have a small bowl of water ready for sealing the wrappers.

Place about 1.5 Tbsp of the filling in the center of a dumpling wrapper. Dip your finger in water and lightly moisten the edges of the wrapper where you will seal it. This helps the wrapper stick together securely.

Fold the wrapper in half, enclosing the filling. Pinch the edges firmly to seal, and then create pleats along the sealed edge to give the dumpling its shape.

I made four pleats on each side, but feel free to shape them however you like! Get creative with your dumpling designs.

Fill a steamer pot with enough water so that it doesn’t reach the steamer basket. Bring the water to a rolling boil over high heat. Once you see plenty of steam, carefully arrange the dumplings in the steamer basket, leaving some space between them. Cover with the lid and steam for about 10 minutes. Adjust the steaming time depending on the size of your dumplings.
