This whole pork belly roast is incredibly quick, finishing in just 20 minutes of cooking time. It’s perfect for busy weeknights or when you want a restaurant-quality dish with minimal fuss.

Step 1
Introducing our Oven-Roasted Whole Pork Belly, a dish that’s crispy on the outside and incredibly juicy on the inside, perfect even for hot summer days!
Step 2
Prepare 600g of whole pork belly, ideally a cut suitable for boiling. Rinse it thoroughly under cold water and pat it completely dry with paper towels. Ensuring the surface is dry is crucial for achieving a crispy skin.
Step 3
Season the dried pork belly evenly on all sides with salt and black pepper. Gently massage the seasonings into the meat to ensure they adhere well.
Step 4
Prepare the whole garlic cloves by lightly smashing them with the side of a knife or slicing them into halves or thirds. Arrange the smashed or sliced garlic and the 5 bay leaves over the pork belly. Drizzle the 2 Tbsp of cooking wine over everything. Let it marinate for 30 minutes. The cooking wine will help tenderize the meat and remove any porky odors.
