Essential Ingredients

  • Dried shredded squid (Jinmi-chae) 150g
  • 1 Tbsp minced garlic
  • 3 Tbsp gochujang (Korean chili paste)
  • 2.5 Tbsp gochugaru (Korean chili flakes)
  • 3 Tbsp yuzu syrup (with fruit pieces)
  • 1 Tbsp oligosaccharide
  • A pinch of sesame seeds

Cooking Instructions

First, cut the dried shredded squid into bite-sized pieces, about 5-7 cm long, so it’s easier to eat and absorbs seasoning well. Soak the cut squid in cold water for about 5 minutes to soften it slightly. This helps prevent it from becoming too hard during cooking. Drain the softened squid lightly using a sieve.

Now, let’s make the delicious seasoning! In a bowl, combine the drained dried shredded squid with 1 Tbsp minced garlic, 3 Tbsp gochujang, 2.5 Tbsp gochugaru, and the star of this recipe, 3 Tbsp of fragrant yuzu syrup. The sweetness and tanginess of the yuzu syrup will elevate the flavor of the sauce. Mix everything gently with your hands, ensuring the seasoning is evenly distributed throughout the squid.

Heat about 1-2 Tbsp of cooking oil in a pan over medium-low heat. Add the seasoned dried shredded squid and begin to stir-fry. Be careful not to burn the seasoning, and stir occasionally to prevent it from sticking to the bottom of the pan. Stir-fry for about 2-3 minutes, allowing the seasoning to slightly meld with the squid.

Once the seasoning has somewhat coated the squid, reduce the heat to very low or turn it off temporarily. At this stage, add 1 Tbsp of oligosaccharide to adjust the sweetness and add a glossy finish. To prevent the squid from becoming too tough, gently toss it using the residual heat of the pan, rather than prolonged cooking. Be mindful not to overcook it, as it can become chewy!

Finally, sprinkle a pinch of sesame seeds for a nutty aroma. Gently mix with chopsticks to distribute the sesame seeds evenly.
