Instead of fried rice, you can whip up a fantastic side dish in no time with this magical Sausage and Vegetable Stir-Fry recipe. It’s incredibly easy to make and so delicious that everyone, from kids to adults, will love this classic Korean dish. It’s perfect for a fridge clean-out!
Main Ingredients- 12 mini Vienna sausages
- 1 onion
- 1 king oyster mushroom
- 5 cloves garlic
- A little bit of green onion (leafy part)
Seasoning Ingredients- 2 Tbsp ketchup
- 1 Tbsp oligosaccharide
- 0.5 Tbsp gochujang (Korean chili paste)
- A pinch of black pepper
- A pinch of salt

Cooking Instructions
Step 1
First, prepare your vegetables. Slice the onion into about 1cm thick strips and the king oyster mushroom into similar-sized pieces. Thinly slice the garlic and diagonally slice the green onion. Having all your ingredients prepped makes the cooking process much smoother.
Step 2
Make 2-3 slits on the mini Vienna sausages to help them cook evenly and look more appealing. Briefly blanch the sausages in boiling water for about 30 seconds to 1 minute to remove any impurities and achieve a slightly chewier texture. Drain the blanched sausages on a sieve.
Step 3
Now, let’s start stir-frying. Heat a generous amount of cooking oil in a pan over medium heat. Add the sliced garlic first and sauté until it’s golden brown and fragrant, being careful not to burn it. The aroma of the garlic will significantly enhance the dish’s flavor.
Step 4
Once the garlic is golden, add the sliced onion and king oyster mushroom. Stir-fry until the onion becomes translucent. Cooking over medium heat will help bring out the natural sweetness of the vegetables without burning them. Maintaining medium heat is key to achieving perfectly cooked, delicious vegetables.
Step 5
When the vegetables are somewhat tender, add the blanched mini Vienna sausages and the diagonally sliced green onion. Stir-fry quickly to prevent the sausages from sticking to the pan. The addition of the green onion adds a refreshing aroma and enhances the overall taste.
Step 6
Finally, reduce the heat to low. Add all the prepared seasoning ingredients (ketchup, oligosaccharide, gochujang, black pepper, and salt) to the pan. Stir well to ensure the sauce coats all the ingredients evenly. Avoid overcooking, as it can make the sausages tough. Once the sauce is well combined and glossy, turn off the heat.
