Spicy Garlic Scape Stir-fry with Fried Tofu: A Delicious Side Dish Recipe
Delicious Stir-fried & Seasoned Garlic Scapes, Perfect for a Seasonal Side Dish!
Introducing two incredibly delicious side dishes made with fresh, in-season garlic scapes that the whole family can enjoy. I bought these vibrant, fresh garlic scapes, which are particularly loved by my daughter, and decided to make them both stir-fried and seasoned. For the stir-fry, I added plenty of savory fried tofu (yubu) to enhance the umami flavor, while the seasoned version is tossed with a special sauce to maintain its crisp texture. I was surprised when my daughter, who initially only asked for the stir-fry, started reaching for the seasoned garlic scapes more often as they became tastier! It truly highlights the power of seasonal ingredients. The stir-fried garlic scapes with fried tofu were so popular that everyone, young and old, picked out the tofu first! Enjoy a flavorful meal with these garlic scape stir-fries and seasoned dishes that disappear quickly from the table. Wishing you a happy and delightful day! ♡

Cooking Instructions
Step 1
Trim the tough ends of the fresh garlic scapes. Wash them thoroughly under running water, then place them in a colander to drain excess water.
Step 2
Heat a wide pan or wok over medium heat. Add the drained garlic scapes and stir-fry them briefly. This step helps them soften slightly and allows for better oil coating in the next step.
Step 3
Once the garlic scapes are lightly coated with oil, push them to one side of the pan. Add a little more olive oil to the empty space and add all the seasoning ingredients: oyster sauce, sugar, soy sauce, gochugaru, gochujang, fish sauce, and honey. Stir-fry everything together quickly, being careful not to burn the seasonings. (Tip: If you are adding fried tofu and fish cakes, this is the stage to add them and stir-fry together.)
Step 4
For the seasoned garlic scapes, bring a pot of water to a boil. Add a pinch of coarse salt. Once boiling, add the garlic scapes and blanch for about 1 minute. Be careful not to overcook, as they can become mushy.
Step 5
Immediately drain the blanched garlic scapes and rinse them under cold water to stop the cooking process. Drain thoroughly in a colander. Ensuring they are well-drained is key for the seasoning to adhere properly.
Step 6
In a bowl, combine the well-drained garlic scapes with your preferred seasoning mixture (soy sauce, sugar, sesame oil, toasted sesame seeds, etc.). (Tip: You can also add minced garlic or a splash of vinegar to taste.)
Step 7
Gently toss and mix the garlic scapes with the seasoning using your hands. Ensure the seasoning is evenly distributed throughout the garlic scapes.
Step 8
Arrange the finished stir-fried and seasoned garlic scape dishes attractively on serving plates. Enjoy these healthy and delicious side dishes made with fresh garlic scapes!
