I was making gochujang (red pepper paste) for bibimbap and ended up making this delicious seasoned garlic scapes as well. They turned out incredibly tasty!
Garlic Scapes Stir-Fry Ingredients- 600g garlic scapes (choose fresh and tender ones)
- 15g coarse sea salt (for blanching)
- 30ml fish sauce (adds umami flavor)
- 30ml sesame oil (for a nutty aroma)
- A pinch of toasted sesame seeds (for garnish)
Special Gochujang Seasoning Ingredients- 100g gochujang (Korean red pepper paste)
- 35g spicy gochugaru (Korean chili flakes – adjust for desired heat)
- 65g gochugaru (for color and milder heat)
- 65ml vinegar (balances the sweet and sour taste)
- 35ml lemon juice (adds a refreshing zest)
- 45ml sugar (adjust to taste)
- 30ml rice syrup (for sheen and deep sweetness)
- 30g minced garlic
- 30g minced green onion
- 100g gochujang (Korean red pepper paste)

- 65g gochugaru (for color and milder heat)
- 65ml vinegar (balances the sweet and sour taste)
- 35ml lemon juice (adds a refreshing zest)

Cooking Instructions
Step 1
First, prepare the special gochujang seasoning, the key to this delicious garlic scape dish. In a bowl, combine the gochujang, spicy gochugaru, gochugaru, vinegar, lemon juice, sugar, rice syrup, minced garlic, and minced green onion. Mix thoroughly until there are no lumps. Ensure the seasoning is well blended.
Step 2
Wash the fresh garlic scapes thoroughly under running water. Make sure to clean them well to remove any dirt or debris. Then, trim them into bite-sized pieces, about 5cm (2 inches) long. Cutting them too long can make them difficult to mix, and too short might affect the texture.
Step 3
Bring a large pot of water to a rolling boil. Once boiling, add the coarse sea salt (15g) and the trimmed garlic scapes. Blanch them for a very short time, about 30 seconds to 1 minute. It’s crucial not to overcook them, as they should remain crisp. Immediately after blanching, plunge the garlic scapes into cold water to stop the cooking process and rinse them. Drain them completely, allowing any excess water to drip off, or pat them dry with paper towels.
Step 4
Once the garlic scapes are drained, add the fish sauce (30ml) and gently toss to coat. Let them marinate for about 10 minutes. This step seasons the scapes and adds a layer of umami flavor, preparing them to absorb the main seasoning.
Step 5
Add the prepared special gochujang seasoning to the marinated garlic scapes. Gently mix everything together, ensuring each scape is evenly coated with the delicious seasoning. Allow the mixture to rest for about 15 minutes for the flavors to meld and deepen.
Step 6
Finally, drizzle with sesame oil (30ml) and sprinkle with toasted sesame seeds for a beautiful finish. Your crispy and flavorful garlic scape side dish is ready! It’s delicious right away, but chilling it in the refrigerator for a short while will enhance its crispiness even further.
