Leftover Bread Scones / Plain Bread Scone Recipe
Try making scones using leftover bread slices! Adding nuts makes them even more delicious. These scones are wonderfully crispy on the outside and soft on the inside, and they’re surprisingly easy to make at home. Perfect for a delightful afternoon snack with coffee or tea.
Essential Ingredients- 4 slices of bread (slightly stale bread works great!)
- 2 large eggs
- 2 Tbsp butter, melted
- 1 Tbsp granulated sugar
- 2 Tbsp corn syrup (or other liquid sweetener)
Cooking Instructions
Step 1
First, cut the bread slices into small, bite-sized pieces, about 1-2 cm cubes. Try not to cut them too small, as they might become too mushy. Slightly stale bread is ideal for achieving a crispier texture.
Step 2
In a large mixing bowl, crack the 2 large eggs. Whisk them lightly until well combined.
Step 3
In a separate small bowl, melt the 2 Tbsp of butter (you can use a microwave or a double boiler). Pour the melted butter into the bowl with the whisked eggs. Add the 1 Tbsp of sugar and 2 Tbsp of corn syrup. Mix everything together thoroughly with a spatula or whisk until well combined.
Step 4
Now, add all the pre-cut bread pieces to the wet ingredients (egg, butter, sugar, syrup mixture). Gently toss and mix them until each piece of bread is well coated. It’s important to mix gently to avoid breaking the bread too much.
Step 5
With your hands, gently mash the bread mixture. Try to break it down into smaller pieces, but avoid turning it into a complete paste. If you’re adding chopped nuts, mix them in at this stage.
Step 6
Once the mixture holds together somewhat, shape it into round, flattened scone forms with your hands. Place them on a baking sheet lined with parchment paper, ensuring there’s some space between each scone.
Step 7
Bake in a preheated oven at 180°C (350°F) for about 20 minutes, or until golden brown and cooked through. To check for doneness, insert a skewer into the center; it should come out clean. Baking times may vary depending on your oven. Let the scones cool on a wire rack for a bit before enjoying!
