Sweet & Savory Soy Braised Pork Ribs

Spicy pork ribs are delicious, but today, at my husband’s special request, I made tender and sweet soy-braised pork ribs. I often make spicy ribs or kimchi pork ribs, but this time, I prepared a special sweet version that my husband loves. This dish is perfect for the whole family to enjoy, so be sure to give it a try!

Main Ingredients

  • 1.4kg pork ribs
  • 2 potatoes
  • 2 shiitake mushrooms
  • 2 Korean chili peppers (cheongyang)
  • 2 red chili peppers

For Parboiling Ribs (Odor Removal)

  • 6 bay leaves
  • 1/2 cup soju or cooking wine (cheongju/mirin)
  • 1 tablespoon whole peppercorns

Golden Ratio Marinade

  • 10 Tbsp soy sauce
  • 4 Tbsp soju or cooking wine (cheongju/mirin)
  • 2 Tbsp plum extract (maesilcheong)
  • 4 Tbsp minced garlic
  • 1 tsp minced ginger
  • 2 Tbsp sugar
  • 2 Tbsp corn syrup or oligodang
  • 100ml apple juice
  • 1 onion (grated)
  • 2 Tbsp oyster sauce
  • 1 Tbsp sesame oil
  • Pinch of black pepper

Cooking Instructions

Step 1

Rinse the pork ribs under cold running water for about 30 minutes to remove any blood. After soaking, rinse them thoroughly until clean.

Place the rinsed pork ribs in a pot and add enough water to cover them. Add 6 bay leaves, 1 tablespoon of whole peppercorns, and 1/2 cup of soju (or cooking wine). Bring to a boil over high heat, then parboil for 5 minutes once the water starts bubbling. Drain the ribs. (If you don’t have soju or cooking wine, you can use any neutral spirit; it’s effective for removing gamey odors!)

Rinse the parboiled ribs again and pat them dry. Make shallow cuts along the ribs with a knife to help the marinade penetrate better. This ensures the ribs absorb the flavors deeply.

Now, let’s make the delicious marinade! In a bowl, combine 10 Tbsp soy sauce, 4 Tbsp soju (or cooking wine), 2 Tbsp plum extract, 4 Tbsp generously minced garlic, 1 tsp finely minced ginger, and 2 Tbsp sweet sugar.

Add 2 Tbsp corn syrup or oligodang for a glossy finish, 1 grated onion, 100ml apple juice for a smooth flavor, 1 Tbsp sesame oil for nuttiness, a pinch of black pepper, and 2 Tbsp oyster sauce for umami. Mix everything well to create the flavorful marinade.

Add the scored pork ribs to the prepared marinade. Use your hands to gently toss and coat all the ribs evenly with the marinade. Ensuring every piece is well-coated will result in a richer flavor later.

Cover the bowl with a lid or plastic wrap and let the marinated ribs rest in the refrigerator for at least 1 hour to marinate. For an even deeper flavor, marinate for 2-3 hours or even overnight.

Prepare the vegetables to accompany the ribs. Peel the potatoes and cut them into bite-sized pieces (about 2-3 cm). To prevent them from breaking apart during cooking, you can round off the sharp edges of the potato pieces. Slice the shiitake mushrooms and thinly slice the Korean and red chili peppers on an angle.

Transfer the marinated ribs to a clean pot. Add enough water to almost cover the ribs. I used about 4 cups of water. (Feel free to adjust the water amount to your preference.)

Bring the pot to a boil over high heat. Once it reaches a rolling boil, reduce the heat to medium and cover the pot. Simmer for about 20 minutes. Spooning some of the broth over the ribs occasionally can enhance the flavor.

After 20 minutes, add the prepared potatoes and carrots to the pot. Cover again and continue to simmer for another 10 minutes, or until the potatoes and carrots are tender.

Finally, add the sliced chili peppers and shiitake mushrooms. Stir gently and simmer for a few more minutes until everything is well combined. Your delicious soy-braised pork ribs are ready! Enjoy with a warm bowl of rice.
