You can enjoy it simply as a salad, dressed with wholegrain mustard and olive oil, or use it as a delightful sandwich filling. Today, I’ll also share a detailed guide on making a wonderful sandwich using bagels. Get ready for a treat!

Carrot Rape Ingredients

  • 3 Tbsp olive oil
  • 2 Tbsp lemon juice
  • 1.5 Tbsp whole grain mustard
  • 1.5 Tbsp honey
  • Pinch of black pepper

Carrot Rape Bagel Sandwich Ingredients (Serves 2)

  • Prepared Carrot Rape (to taste)
  • 2 bagels
  • 4 strips thick-cut bacon
  • 2 slices cheese (cheddar or your favorite)
  • 2 fresh eggs
  • 2/3 ripe tomato
  • A little basil pesto
  • A little mayonnaise

Cooking Instructions

Wash and prepare the fresh carrots thoroughly. Using a mandoline slicer or a julienne peeler, cut the carrots into thin, long matchsticks. Be extremely careful when using a mandoline to avoid cutting your fingers.

Add 2 teaspoons of sea salt to the julienned carrots and gently massage them with your hands. Let them sit for 10 minutes to salt and soften. This process draws out moisture, making the carrots crunchier and more flavorful. (Using sea salt results in a cleaner taste without bitterness.)

After 10 minutes, you’ll notice that the carrots have released moisture and become more pliable. You can choose to squeeze out this liquid or leave it in. I personally prefer a moister carrot rape, so I leave the liquid in for a richer flavor.

In a large bowl, combine 3 tablespoons of olive oil, 2 tablespoons of fresh lemon juice, 1.5 tablespoons of flavorful whole grain mustard, 1.5 tablespoons of sweet honey, and a pinch of black pepper. Whisk everything together until well combined.

Transfer the prepared carrot rape to an airtight container. While it’s delicious immediately, allowing it to chill and marinate in the refrigerator for at least 1-2 hours will allow the flavors to meld beautifully, creating a deeper, more complex taste.
