Easy Baekseolgi Rice Cake Recipe! Delicious Traditional Rice Cake for Holidays, Perfect for Beginners
Are you hesitant about making rice cakes? I learned step-by-step from a rice cake expert, and now I can make quite a variety. The very first rice cake I ever made was Baekseolgi, and it’s surprisingly simple, easy, and incredibly rewarding upon completion! Let’s make delicious Baekseolgi by adding toppings like raisins!
Ingredients- 1kg Rice Flour (wet-milled rice flour recommended)
- 10-15 Tbsp Water (adjust according to flour consistency)
- 10 Tbsp Sugar
- 1 tsp Salt
- Toppings (raisins, chestnuts, dates, etc.) as desired
Cooking Instructions
Step 1
In a large bowl, combine 1kg of rice flour, 10 Tbsp of sugar, and 1 tsp of salt. Rub them together with your hands until the sugar crystals are well distributed throughout the flour. Sift the mixture through a sieve to break up any clumps. Gradually sprinkle 10-15 Tbsp of water over the flour mixture while continuously rubbing with your hands. Once the mixture starts to clump together, sift it one more time to loosen any remaining lumps.
Step 2
Try squeezing a handful of the dough tightly. It should hold its shape firmly in your hand. If you gently toss it and it doesn’t crumble easily but stays as a clump, the water content is just right. If it feels too dry, add water very gradually, a teaspoon at a time. If it’s too wet, add a little more rice flour. The amount of water needed can vary depending on the type and humidity of the rice flour, so it’s important to adjust accordingly.
Step 3
Reserve some of the toppings (like raisins) for the top of the cake, and then gently mix the remaining desired toppings into the dough. If you prefer a plain Baekseolgi with no added ingredients, you can skip this step and steam it as is.
Step 4
Fill your steamer (or a pot with a steaming rack) with water and bring it to a rolling boil. If you don’t have a dedicated steamer, you can improvise by using a large pot and a suitable rack placed over it.
Step 5
Lightly dampen a piece of cheesecloth or muslin cloth and wring out the excess water. Place the damp cloth inside the steamer. Gently spread the prepared rice flour dough evenly over the cloth. If you want more toppings on the surface, sprinkle them decoratively at this stage.
Step 6
Cover the rice flour dough with the damp cloth. Place the steamer basket into the pot with boiling water. Make sure the lid is on securely.
Step 7
Cover the steamer tightly with its lid. Steam over high heat for 20 minutes. After 20 minutes, reduce the heat to low and let it steam for another 5 minutes to allow the cake to ‘rest’ or ‘settle’. This steaming process helps to make the rice cake more moist and tender.
Step 8
Your Baekseolgi is now ready! The steam rising from the freshly steamed cake looks and smells delicious.
Step 9
Place a clean cutting board on top of the steamed cake in the steamer, and with confidence, invert the steamer to flip the cake onto the cutting board. Be careful as the cake will be hot.
Step 10
Now, place your serving plate upside down on top of the cake on the cutting board. Gently flip both the plate and the cake together so that the cake lands neatly on the serving plate. It’s best to slice the cake while it’s still warm for clean cuts.
