We’ll guide you through a detailed recipe that anyone can follow to create a deeply refreshing and flavorful bowl of Yeolmu noodles right in your own kitchen, rivaling that of specialty restaurants!
Noodle Broth Ingredients- 1/3 cup Soy Sauce (standard paper cup)
- 1/2 cup Vinegar (standard paper cup)
- 6 cups Cold Water (standard paper cup)
- 2 Tbsp Brown Sugar
- 1 Tbsp Minced Garlic
- 1 Tbsp Toasted Sesame Seeds
Cooking Instructions
Step 1
First, let’s prepare the hard-boiled egg. In a pot, add about 1 liter of water and 1 tablespoon of salt. Once the water boils, carefully place the egg in and boil for 15 minutes until fully cooked. Immediately after boiling, immerse the egg in cold water to cool it down; this makes peeling the shell much easier. Next, thinly julienne the cucumber after washing it thoroughly. For the radish kimchi, drain any excess liquid and cut it into bite-sized pieces with scissors, about one or two mouthfuls at a time. Remove the stems from the Korean green chili pepper and slice it thinly diagonally. Having these garnishes prepared in advance will make assembling the noodles much smoother.
Step 2
Now, let’s make the refreshing sweet and tangy broth that defines the Yeolmu noodles. In a bowl or a wide pot, combine 1/3 cup of soy sauce, 1/2 cup of vinegar, and 6 cups of cold water, using a standard paper cup as your measure. Add 2 tablespoons of brown sugar and stir well with a whisk or spoon until the sugar is completely dissolved. Using cold water that has been refrigerated will enhance the broth’s refreshing taste.
Step 3
To the dissolved sugar broth, add 1 tablespoon of minced garlic and the diagonally sliced Korean green chili pepper prepared earlier to add more flavor. Then, add the entire julienned cucumber for a satisfying crunch. If julienning cucumbers is challenging for you, feel free to use a mandoline slicer for convenience. Finally, add the radish kimchi, cut into manageable pieces with scissors, generously into the broth. The kimchi’s flavor will infuse the broth, creating a deep and delicious taste.
Step 4
Add 1 tablespoon of toasted sesame seeds to enhance the umami of the Yeolmu noodles. Lightly rub the seeds between your palms before adding them to release their aromatic fragrance. Taste the broth now, and if it’s not to your liking, you can adjust it by adding a little more soy sauce if it’s too bland, more vinegar for extra tanginess, or a touch more sugar for sweetness. Now, all that’s left is to add the ice, and your refreshing Yeolmu noodle broth will be complete!
Step 5
It’s time to cook the noodles. Use a large pot with plenty of water and bring it to a rolling boil over high heat. Once the water is boiling vigorously, add the noodles and separate them. As soon as the water comes back to a boil, add 1 cup of cold water. When it starts boiling again, add another cup of cold water and wait for it to boil once more. This process of adding cold water twice helps to achieve perfectly chewy noodles. The total cooking time should be around 3 minutes and 30 seconds to 4 minutes, though this can vary slightly depending on the thickness of the noodles. This method is a well-known technique for cooking chewy noodles.
Step 6
Once the noodles are cooked, drain them in a colander and immediately rinse them under cold running water. Gently rub the noodles with both hands while rinsing. This step removes excess starch from the noodles, ensuring they remain firm and don’t become mushy.
Step 7
In a serving bowl, arrange the rinsed and drained noodles attractively. Ladle a generous amount of the chilled Yeolmu noodle broth over the noodles. Finally, top the bowl with the prepared hard-boiled egg, julienned cucumber, diagonally sliced chili pepper, and the chopped radish kimchi. Add a few more ice cubes if desired for extra chill. And there you have it – a visually appealing and incredibly delicious bowl of Yeolmu noodles! Enjoy your meal!
