This weekend, I found chicken on sale at the supermarket, and since we love both chicken and curry, I decided to make Chicken Curry! To truly savor the Indian flavors, I also made naan to go with it, which was the perfect pairing. This Chicken Curry has a delightful Indian aroma and tastes absolutely delicious. Adding spinach gave it a wonderful texture with pleasant bites of vegetables. I highly recommend this dish to anyone who enjoys Indian cuisine! 🙂

Main Ingredients

  • 500g Chicken, cut into bite-sized pieces
  • 69g Fresh Spinach, thoroughly washed
  • 1/2 Onion, finely chopped
  • 1 Tbsp Minced Garlic
  • 110g Unsweetened Plain Yogurt
  • 1 tsp Salt
  • Pinch of Black Pepper
  • 100ml Water

Cooking Instructions

Step 1

First, rinse the chicken thoroughly and cut it into bite-sized pieces. Using fresh chicken will result in a more flavorful curry.

Step 1

Step 2

In a large bowl, place the prepared chicken. Add 110g of unsweetened plain yogurt, 1 tsp of salt, a pinch of black pepper, 1/2 Tbsp of cumin powder, 1/2 Tbsp of thyme powder, and 4 Tbsp of curry powder. Mix everything well with your hands to ensure the marinade coats the chicken evenly. Cover the bowl tightly with plastic wrap and let it marinate in the refrigerator for at least 1 hour. This allows the flavors to penetrate the chicken, making it more tender and delicious.

Step 2

Step 3

Peel and finely chop the onion. Chopping the onion finely will help release its sweetness and flavor when sautéed, contributing to a smoother curry texture.

Step 3

Step 4

Prepare the spinach by removing any wilted leaves or debris, then wash it thoroughly under running water several times. After washing, drain it well in a colander to remove excess water. This prevents the curry from becoming watery and helps retain the natural flavor of the spinach.

Step 4

Step 5

Heat a large, deep skillet over medium heat. Add a generous amount of cooking oil. Once the oil is hot, add the chopped onion and sauté until it becomes translucent. Sautéing the onions well will enhance their sweetness and flavor, deepening the curry’s taste.

Step 5

Step 6

Once the onions are translucent, add 1 Tbsp of minced garlic and sauté until fragrant and lightly browned. This step further enhances the garlic’s flavor, making the curry richer. Be careful not to burn the garlic.

Step 6

Step 7

When the aroma of garlic and onion is fragrant, add the marinated chicken to the skillet. Reduce the heat to low and cook for about 5 minutes, stirring occasionally, until the surface of the chicken turns opaque. This process helps to seal in the chicken’s juices, keeping it moist.

Step 7

Step 8

Pour 100ml of water into the skillet with the chicken. Cover the skillet with a lid or a perforated lid (to allow some steam to escape) and simmer over medium heat for 10 to 15 minutes, or until the chicken is cooked through and the sauce has thickened. Flip the chicken halfway through to ensure even cooking. You can adjust the simmering time to achieve your desired curry consistency.

Step 8

Step 9

Once the chicken is fully cooked, add the drained spinach to the skillet and sauté briefly until it wilts. Avoid overcooking the spinach, as this can diminish its crisp texture and nutritional value.

Step 9

Step 10

Transfer the finished Spinach Chicken Curry to a serving bowl. Garnish with finely chopped fresh parsley for an aromatic touch and visual appeal. This completes your delicious Indian-style Chicken Curry. Serve hot with warm naan or rice!
