Main Ingredients- Beef (for Bulgogi) 600g
- 1 Apple
- 1 Enoki mushroom
- 1/2 Onion
- 1/3 Carrot
Cooking Instructions
Step 1
First, prepare 600g of beef specifically for bulgogi. Gently patting the beef dry with paper towels to remove excess moisture can lead to a cleaner taste.
Step 2
Wash one fresh apple, peel it, remove the core, and then blend it whole in a blender. This grated apple not only helps tenderize the meat but also adds a natural sweetness.
Step 3
Let’s make the delicious bulgogi marinade! In a bowl, combine 45ml soy sauce (about 3 Tbsp), 30ml plum extract or corn syrup (about 2 Tbsp), 1 Tbsp oyster sauce, and 1 tsp minced garlic. Mix them well. The plum extract helps to remove any gamey odors from the beef and adds a subtle sweetness.
Step 4
Pour the marinade made in step 2 and the grated apple from step 1 over the beef. Add thinly julienned carrot as well, and mix everything gently with your hands to ensure the beef is well-coated. The carrot adds color and a nice crunch. Let it marinate for at least 30 minutes for the flavors to penetrate fully.

Now, it’s time to cook the bulgogi. Heat a pan over medium heat and add the marinated beef and carrots. Stir-fry them. Slice the 1/2 onion into thick strips and add it when the beef is about halfway cooked. The onion’s sweetness will meld beautifully with the beef, enhancing the overall flavor.

When the beef is no longer pink and about half cooked, add the enoki mushroom. Trim the base and separate the mushroom into strands before adding it to the pan. Enoki mushrooms are best when cooked only briefly to maintain their delicate texture.
