  • 1 carrot (peeled and cut into bite-sized pieces)
  • 1 onion (cut into large chunks)
  • 1 green onion (cut into large pieces)
  • 1 pack of king oyster mushrooms (sliced into bite-sized pieces)
  • 2 cups rice water
  • 1 cup milk
  • A splash of soju (for removing chicken odor)

  • 3 Tbsp gochujang (Korean chili paste)
  • 3 Tbsp gochugaru (Korean chili flakes, adjustable for spice level)
  • 4 Tbsp soy sauce
  • 2 Tbsp minced garlic
  • 1/2 tsp dried basil (optional, enhances flavor)
  • 1/2 chopped onion
  • Pinch of black pepper
  • 2 Tbsp cooking syrup or corn syrup (adjustable for sweetness)

Cooking Instructions

Step 1

Prepare one whole chicken for the Dakbokkeumtang, washing it thoroughly. Choose a generous size that can be enjoyed by the whole family.

Step 1

Step 2

Prepare the vegetables for the Dakbokkeumtang. Peel the potatoes and carrots, then cut them into large, bite-sized pieces. Slice the onion into large chunks, and cut the king oyster mushrooms into manageable pieces. Cut the green onion into about 3 large sections.

Step 2

Step 3

Rinse the prepared chicken under cold water to remove any blood. Then, soak it in 1 cup of milk for 30 minutes. This step effectively removes any gamey odor from the chicken.

Step 3

Step 4

Discard the milk used for soaking and rinse the chicken thoroughly under cold running water. If you prefer a lighter and cleaner taste, you can remove all the chicken skin at this stage. This also makes it less heavy if you want to mix rice with the broth.

Step 4

Step 5

Lightly season the rinsed chicken with a little dried basil and black pepper. Place it in a pot, add water to cover, and boil for 20 minutes. Skim off any foam or oil that rises to the surface during boiling to create a clear broth.

Step 5

Step 6

After boiling the chicken for 20 minutes, drain the chicken broth. (You can reserve some of the broth if you like.) Transfer the chicken to a clean pot.

Step 6

Step 7

Add 2 cups of rice water to the pot with the chicken. Add more water if needed to ensure the chicken is submerged. Rice water adds a deeper, smoother flavor to the broth.

Step 7

Step 8

Add 3 Tbsp gochujang and 4 Tbsp soy sauce for initial seasoning, and bring to a simmer over medium heat. Once the broth boils, add the sliced potatoes and carrots first and continue to cook.

Step 8

Step 9

Once the potatoes and carrots are partially cooked, add 3 Tbsp gochugaru, 2 Tbsp minced garlic, 1/2 chopped onion, a pinch of black pepper, and 2 Tbsp cooking syrup. Adjust the seasoning to your preference. Stir well to combine the sauce and continue to simmer. Next, add the king oyster mushrooms and the large-chunked onion, along with the green onion cut into 3 large pieces. Let it simmer and reduce over medium heat, allowing the flavors to meld.

Step 9

Step 10

As the Dakbokkeumtang reduces, remove the green onion pieces that were added initially. Add the diagonally sliced green onion to finish the dish. This step adds a fresh aroma from the green onions.

Step 10

Step 11

Simmer until the sauce thickens to your desired consistency, and your delicious Dakbokkeumtang is complete! It’s visually appealing and wonderfully flavorful, making for a hearty and satisfying dinner for the whole family. Enjoy it with a warm bowl of rice!
