My twin sons’ birthdays are today, but we celebrated last weekend with a special birthday meal! Although they told me not to fuss, a mother’s heart can’t help but prepare something special. So, I ordered their favorite LA Galbi online and decided to grill it. I usually make it braised because grilling felt a bit daunting, but this time I confidently made it grilled! The reason for my confidence? I finally splurged on a large, flat grill pan! With this spacious pan, grilling just a few batches meant everyone could enjoy the delicious ribs without interruption. I really should have bought this sooner! As we enjoyed the meal, my daughter repeatedly called me a ‘rib genius’! This delicious LA Galbi, made with ingredients already at hand without a trip to the grocery store, is perfect for any special occasion. Prepare it and make your celebration even more memorable! Main Ingredients

  • 3kg LA Galbi (beef short ribs)
  • 1 cup soju (for soaking)
  • 1 onion
  • 15 cloves garlic

Special Marinade

  • 6 Tbsp oyster sauce
  • 2 Tbsp fish sauce
  • 2 Tbsp soy sauce
  • 7 Tbsp honey
  • Pinch of black pepper
  • 10 Tbsp cooking wine (mirin or rice wine)

Cooking Instructions

Step 1

Rinse the LA Galbi under cold running water. In a bowl, combine 1 cup of soju with enough water to cover the ribs and soak them for about 30 minutes to remove excess blood. After soaking, rinse the ribs thoroughly again and drain them well in a colander, ensuring all excess water is removed before proceeding.

Step 2

Peel the onion and the garlic cloves. Place them in a blender or use a grater to finely mince them. Strain the mixture to extract only the juice. Discard the pulp or save it for other dishes.

Step 3

In a separate bowl, combine the extracted onion and garlic juice with the oyster sauce (6 Tbsp), fish sauce (2 Tbsp), soy sauce (2 Tbsp), honey (7 Tbsp), cooking wine (10 Tbsp), and a pinch of black pepper. Whisk everything together until well combined to create your delicious special marinade.

Step 4

Place the well-drained LA Galbi in a large bowl. Pour the prepared special marinade over the ribs. Using your hands, gently massage the marinade into the meat, ensuring every piece is evenly coated. Cover the bowl and refrigerate for at least 1 hour, or ideally 2-3 hours, to allow the flavors to penetrate deeply.

Step 5

Heat a large skillet or grill pan over medium heat. Add the marinated LA Galbi in a single layer, being careful not to overcrowd the pan. Grill for several minutes per side, turning occasionally, until the ribs are beautifully browned and cooked through. Serve immediately while hot for the best flavor and texture.
