Remove the stems from the cherry tomatoes and cut them in half diagonally. For the shrimp, peel and devein them, leaving the tails on. Make a shallow cut (about 1-2 cm deep) along the back of each shrimp; this helps them cook evenly and look aesthetically pleasing. Pat the shrimp completely dry with paper towels to prevent oil splattering during frying. Lightly coat the prepared shrimp evenly with the tempura flour mix, ensuring a good base for the coating.
