Unable to forget the taste of chicken from my dream, I immediately went to the mart, bought the ingredients, and made this dish.   • 4-5 fresh chicken drumsticks
  • 500ml milk (enough to fully submerge the drumsticks)
  • A small bunch of fresh radish sprouts
  • 1 tsp Herb salt
  • Pinch of whole peppercorns
  • 1 fresh tangerine

Sauce Ingredients

  • 3 Tbsp store-bought Yuzu dressing
  • Pulp from 1/2 tangerine, blended
  • Pinch of black pepper

First, rinse the chicken drumsticks thoroughly to remove any impurities and pat them dry with paper towels. This step helps to eliminate any gamey odor, ensuring a cleaner flavor. Make sure to get rid of excess moisture for a better result.

Evenly sprinkle the herb salt and whole peppercorns over the rinsed chicken drumsticks. The aromatic herbs and the slight bite of pepper will enhance the chicken’s natural flavor. Rub the seasoning well into all sides of the drumsticks.

Pour enough milk into a container to completely submerge the seasoned chicken drumsticks. The milk tenderizes the chicken by breaking down proteins and helps to remove any unwanted odors. Cover the container and refrigerate for at least 1 to 1.5 hours. For an even more tender result, you can marinate them for up to 2 hours.

Place the drumsticks in the air fryer basket and cook at 180°C (350°F) for about 20-25 minutes, or until golden brown and cooked through. Flipping them halfway through will ensure even cooking.

Let’s make a delicious sauce! In a small bowl, combine 3 tablespoons of store-bought Yuzu dressing with the blended pulp of half a tangerine.
